AVOCADO AND CUCUMBER SALAD

2 Minced cloves garlic
1 tablespoon minced dill
1 teaspoon lemon zest
Juice of 2 lemons
1/4 cup olive oil
8 oz mixed lettuce
3 Avocados,diced
1 English cucumber thinly sliced in half moons
1/2 small redoing, thinly sliced
Salt and pepper to taste

Method:
COMBINE GARLIC, DILL, LEMON ZEST, JUICE, OLIVEOIL, SALT AND PEPPER
TOSS DRESSING WITH AVOCADO, CUCUMBER AND RED ONION
SERVE WITH MIXED GREENS.


BAKED  AUSTRALIAN  BARRAMUNDI  FILLETS    (Always available at Costco)

Serves 4

  • 4 Australian Barramundi Fillets
  • 2 Teaspoons olive or canola oil
  • 2 Tablespoons butter
  • 1 clove garlic, minced
  • 3 tablespoons fresh lemon juice
  • 6 leaves minced fresh basil
  • 1/2 Teaspoon paprika
  • Pepper to taste

Method:
Pre-heat the oven to 400 degrees   (adjust for altitude)
Saute the garlic in butter
Stir in lemon and basil
Place fillets in a greased oven proof dish
Pour olive oil or canola mixture over fillets and sprinkle with small amount of paprika
Bake for approximately 15 minutes
Carefully remove fillets onto individual serving plates with a flat spatula
Serve with lemon wedges and assorted vegetables

BEEF CHILI

Ingredients:

  • 1 1/2 LBs Ground beef
  • 1 Tablespoon olive oil
  • 2 Medium onions chopped
  • 4 Cloves garlic, minced
  • 1 Teaspoon salt
  • 1 Teaspoon pepper
  • 7 Tablespoons chili powder
  • 2 Teasp0oons garlic powder
  • 1 Teaspoon hot pepper flakes (to taste)
  • 2 16 oz. cans of red kidney beans
  • 1 16 oz. can diced tomatoes
  • 1/2 can beer
  • 3 Tablespoons ground cumin
  • 1 Tablespoon Worcester Sauce

Method:
Cook ground beef in olive oil with onion, garlic, salt and pepper until browned well in a large pot.
Break up meat with spatula as you cook.
Add bell peppers, chili powder, garlic powder, onion powder and hot pepper flakes. continue to cook on low heat for 3 minutes.
Add the remaining ingredients and gently bring to a boil.
Allow to simmer 15 minutes then turn off heat and allow to cool.
Reheat when ready to eat.
Serve with grated cheese and chopped onions.

Serves 10.
